VEGETABLE BIRYANI

INGREDIENTS :

Basmati Rice : Washed and soaked

Whole garam masala: (cloves, cardamom, cinnamon, pepper)

Ginger-Garlic paste : 1 tsp

  • Fresh coconut
  • Mint leaves
  • Poppy seeds(khus khus) Grind to a fine paste
  • Ginger
  • Garlic
  • Green chilies

Onions : 1, chopped lengthwise

Tomato : 1-2 , finely chopped

Shahjeera : ? tsp

Bay Leaves : few

Vegetables ( like potatoes, : cut lengthwise

carrots, beans, cauliflower )

Turmeric powder : ? tsp

Dhaniya powder : 1 tsp

Salt

Oil

METHOD :

Heat oil. Add the whole spices, ginger-garlic paste, and onions. Fry till onion turn transparent. Then add tomatoes and the coconut paste, fry for a while. Now add all the chopped vegetables and cook them. Then add the soaked rice along with salt, turmeric powder, dhaniya powder and required amount of water and cook on slow flame till done. Garnish with cilantro and fried onions and serve with Raitha.
