Stewed Zucchini (courgette)

Makes 2-3 servings

1 1/2 lb. zucchini, peeled and diced
8 oz. can of tomato sauce (if you prefer use two fresh tomatoes)
2 Tbs. olive oil
Salt & pepper to taste
2 Tbs. fresh or dry basil
2 cloves garlic, minced or 1 tsp. garlic powder
1/4 cup water

Place all ingredients in a pot and stir. Cover the pot and heat over low flame 1/2 hour or more. Serve with cooked rice, pasta or bread
